I love a good guacamole!
I’ve already posted my BASIC version of guacamole, but this one adds a salty and savory element: bacon.
I know that there are a lot of bacon lovers out there, so make this for an afternoon get-together with friends or for snacking while watching a movie or a game. If you want to make it vegetarian, use a vegetarian bacon, which is also delicious in this guacamole. Give it a try!
Bacon Guacamole (Guacamole con Tocino)
6 bacon slices
2 large ripe avocados (Hass variety preferred), halved, seed removed and peeled
¼ cup white onion, finely chopped
2 serrano chiles, stemmed and finely chopped (without seeds for a milder version)
2 tablespoons cilantro, chopped
1 tablespoon lime juice
1 Roma tomato, seeded and chopped
Salt, to taste
In a skillet, cook the bacon until crispy. Drain on paper towels and let cool. When it is cool, crumble or chop the bacon to small bits.
In a medium-size bowl, add the avocado and mash, using a fork or a potato masher. Add the onion, chiles, cilantro, lime juice and bacon crumbles and stir.
Add the diced tomato and stir in carefully. Taste for salt and adjust, if needed.
