For me, watermelon is a flavor that reminds me of “summer.” Though we are a couple weeks away from the summer solstice, we are enjoying summer-like weather here in Madison. Everything is green, the birds are singing and our dogs are enjoying their time romping around the yard. I love this time of year!
This is a simple drink you can enjoy, as we have, relaxing outside on your porch, patio or deck. I’m sure it tastes just as delicious when you are looking out from inside your home too.
Watermelon and Tequila Cooler (Sandia y Tequila Fresca)
About ½ medium watermelon (about 2 pounds)
2 ounces tequila (blanco/silver or reposado/gold)
¼ cup fresh lime juice
¼ cup simple syrup* or agave nectar
Ice cubes
Cut the rind off the watermelon and remove the seeds. Cut enough chunks to measure 2 cups and put in a blender. Add the remaining ingredients and puree until smooth. Pour over ice in two tall glasses. Serve cold and enjoy!
